• 1 c white organic basmati rice
  • 1.5 c vegetable broth
  • 1 tbsp organic ghee or olive oil
  • 1 tsp sea salt
  • 1 tsp turmeric
Greek Rice

This rice goes great with Greek or Mediterranean dishes such as the Seitan Mishwi. It is very aromatic, flavorful and colorful.

This quality of this dish depends almost entirely on your choice of vegetable broth so choose well. I personally like the Pacific Foods brand since there are no ingredients besides water and vegetables in it. Vegans should obviously use olive oil instead of ghee. For those using ghee, use real clarified butter instead of vegetable ghee. Vegetable ghee is usually hydrogenated oil.

  1. Heat the ghee (or olive oil) in a sauce pan at medium heat.

  2. Stir rice in the ghee or oil until some of the rice starts to brown.

  3. Pour in broth and turn up the heat until boiling.

  4. Reduce heat to low, cover and cook the rice for 15 minutes.

  5. Remove from heat and sprinkle with salt and turmeric.

  6. Fluff the rice with a fork and cover it back up until ready to serve.
