• 3 tbsp ghee or butter
  • 3 tbsp flour
  • 3 c vegetable broth
Roux Sauce

For a recipe having only three ingredients, this is not an especially easy one. There is a bit of black art involved in making sure everything happens as it should. Don't be scared away though, the result is delicous and useful as a component of a number of dishes.

Think of this sauce as a gravy without the nasty turkey innards. Vegans could try it with a different oil.

  1. Heat the ghee or butter in a heavy skillet until melted. Be careful not to smoke it.

  2. Add the flour while stirring the mixture. Keep stirring it around the pan for 5 minutes or so. the mixture will start to spread out when it is cooked completely.

  3. Add in the broth and turn up the heat. Stir it around while bringing it to a boil. Turn down the heat and stir it until the mixture thickens.
